Abstract
The food markets of the industrialized countries are split into different quality segments above all low price products, high quality products and organic products. The specific quality demands are widely regulated by law or by standards set by different organizations, food companies or super market chains as well. In order to accomplish th demands of the specified markets, it is necessary to optimize the complete production chain concerning safety and efficiency as well. Concerning the safety of herbs and spices the hot, and humid climate prevailing in many cultivation countries, the mostly simple, unpretentious production conditions, and the often inadequate instruction of farmers and farm hands give rise to fundamental problems. Considering this background, we have to deal with the following hygienic topics, which will be discussed in more detail£ºnatural and anthropogenic contaminants, residues of fertilizers, plant-conditioning and plant-protective agents, filth, pests, the microbial status and the occurrence of microbial toxins.
